This Easter, Tony is cooking up ‘Eggs Antonio’ because Easter wouldn’t be Easter without his favourite breakfast.
The main ingredient is the tomato sauce which was in Tony’s February Recipe of the Month. And of course some other components:
- Pasta tomato sauce (already made)
- Sliced mushrooms
- Seasoning (salt and pepper)
So once you have your tomato sauce all ready (defrosted from the freezer), you’ll need to pan fry the mushrooms in olive oil.
Make sure they’re slightly browned before you add in the tomato sauce. You might be used to poaching eggs in water but for this recipe, they’re poached in the actual tomato sauce.
Cook the eggs to your liking and serve on toasty when ready. I’ll be having this on Easter Sunday before I head into work. So if you have any questions about the recipe or tried it yourself and want to tell me how delicious it was, come into the store; we’ll be open 12-7pm!
