La Sirène Cuvée de Bois
La Sirène Cuvée de Bois was initially co-fermented with Chardonnay grapes. Then it was blended with two different Saisons from 2013 and 2014; (30% of the 2014 and 45% of the 2014) that had been barrel fermented.
After this, the Saison was left on its side where it was able to for 8 months and carbonate with indigenous flora.
They refer to this as the Solera system, as in sherry, they left some of the older stock in the barrels and then added new beer to that and of course there’s leftovers for the future.
We’re over the moon that we have this small batch beer at the store!
