Tony’s winter warmer
I remember all too well of wet and dark days in winter and with 3 kids under foot, it was a challenge to get dinner ready on time! I soon developed this 4 key ingredient meal which became a family favourite.
This is my version of pasta e fagioli, or pasta “fazool”
- Potatoes diced
- Spaghetti broken in half
- One head of broccoli finely chopped
- A tin of butter beans
- Salt and pepper to taste
There are many variations of this. This one is quite light but it’s warming on winter’s day and it’s all one pot cooking.
So start off with water in a pot, boil the potatoes, then add the spaghetti and finally the broccoli and the tin of beans. Boil for a total of 20 minutes and with a bit of seasoning you have your meal all ready! On a really cold day, I like to put in one red hot chili.
And I tend to serve with parmesan cheese. It’s quick and easy and light to make. I think the Pressing Matters Riesling would be lovely with this or a soft Chardonnay such as the Amble and Fox Chardonnay.
Dab a touch of olive oil on the dish and hey presto, it’s ready to eat!
